This oil is perfect for marinating fish, drizzling on bread, or tossing with salad. One of many favorites! Enjoy! :)

Ingredients
  • 1/3 cup black olives, pitted
  • 1 anchovy, or 1 tsp anchovy paste
  • 1 cup extra virgin olive oil
  • 1 garlic clove
  • 1 thyme sprig, leaves only, chopped
  • 1 tablespoon lemon juice
  • Bottle with stopper for storage

Directions
  1. Combine all ingredients in a blender, puree until smooth.
  2. Pour into bottle until ready to use.
