These Whoopie Pies are from the July 2004 Womans Day addition... They are so good....Your kids will love them...They will love the creamy filling....

Ingredients
  • 1 stick butter, softened
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon each baking powder and salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 cup 1 % lowfat milk
  • 2 cups all purpose flour
  • Filling:
  • 3/4 stick butter, melted
  • 1 cup plus 2 tablespoons confectioners sugar
  • 1 cup plus 2 tablespoons marshmellow cream
  • 1 1/2 teaspoon vanilla extract

Directions
  1. Heat oven to 375 degrees; coat baking sheets with non stick spray.
  2. For the batter, beat first 5 ingredients in a large bowl with mixer on medium speed until fluffy.
  3. Beat in egg and vanilla, then cocoa until blended.
  4. With mixer on low speed, slowly beat in milk until blended.
  5. By hand, stir in flour.
  6. Drop level teaspoons 2 inch apart on prepared baking sheets.
  7. Bake 8 minutes or until tops spring back when lightly pressed.
  8. Cool on baking sheet 1 minute before removing to a wire rack to cool completely.; repeat with remaining batter.
  9. Filling:
  10. With a wooden spoon, vigorously mix all ingredients until blended and smooth.
  11. Spread 2 teaspoons onto flat side of half the cookies; top each with another cookie, pressing to adhere.
