Queso Con Chorizo

This dish is a great appetizer that I first had at the San Angel restaurant in Disney. I recreated it once I got home and we have enjoyed it ever since.
Ingredients
- 1 sweet onion sliced shopping list
- 4 oz. mushrooms sliced shopping list
- 1 seeded sliced jalapeno shopping list
- 1/2 pound chorizo cut up or bulk shopping list
- 8-10 slices muenster cheese shopping list
- olive oil for frying veggies shopping list
- tortillas shopping list
How to make it
- Fry chorizo and set aside
- Fry onion in olive oil until clear and soft
- Fry mushrooms the last few minutes the onions are frying until they are soft this will allow the onions to carmelize
- Add the pepper in the last minute but be careful of the fumes
- Add the chorizo
- Place mixture in an oven proof casserole dish
- Put cheese on top of mixture (use as much as you like)
- Broil until cheese is golden brown and bubbly
- Serve in warm tortillas
