OK all these years I thought my early childhood memories were betraying me until now. I was remembering my parents putting hot bacon grease on lettuce and green onions and eating it. I never would try it because I was only about 4 or 5 and a really picky eater. You have just proved to me that I am not having wrong memories after all. Heeheehee

There is a similar recipe in some of my 1960's cookbooks and I thought it was crazy. Then my grandmother and mother both told me this was standard fare. It's hard to justify bacon grease these days, but it is surprisingly good.

I am going to try this. I have had the similar spinach salads this way with crumbled bacon but have never tried to make this myself. I grow swiss chard (easy to grow) and this would be great over those fresh leaves! I may try it with rice vinegar though instead of apple cider vinegar! It looks delicious!

My mother in law always made this in the Spring when the lettuce was big enough to pick. (with just hot grease and vinegar) and she called it Killed Lettuce. It is a very traditional dish here in East TN. Eat with your pinto beans!
