Ingredients
  • 15 oz cooked or canned Chick-peas
  • 3 cloves garlic crushed
  • 1 bunch scallions (white parts only)
  • 2 tsp toasted and ground cumin seeds
  • 2 tsp toasted and ground coriander seeds
  • 1 - 3 fresh green chile, seeded and finely chopped
  • 2 Tbls Cilantro chopped
  • 1 egg beaten
  • 2 Tbls Flour
  • Seasoned flour for shaping
  • Olive Oil or Clarified Butter for frying.
  • Garnish: Lemon wedges & cilantro
  • Tahini Dip: Mix
  • 2 Tbls Tahini
  • Juice of 1 lemon
  • 2 cloves garlic crushed
  • Add a little water if needed.

Directions
  1. Put well drained chick-peas into a food processor. Pulse into a chunky paste. Add garlic, cumin, and coriander. Process until well mixed.
  2. Scrape mixture into a bowl, stir in scallions, chile, cilantro, egg, and flour. Season with salt and pepper and mix well. If the mixture seems a little loose, add a little more flour. Cover bowl with a towel and chill for at least 30 minutes.
  3. When ready to cook:
  4. Usind floured hands shape mixture into 12 small cakes. Heat oil or butter in skillet on Med High heat. Fry cakes for about 1 minute per side or until crisp and golden. Drain on paper towel
  5. Garnish with Lemon wedges and cilantro leaves and serve with Tahini Dip.
  6. Variation: Mix plain yogurt with a little chopped chile, lemon and fresh mint for and additional dipping sauce.

I finally made these beauties - oh wow! I had been craving them for sooo long. I will not wait so long to make them again as I am fool for falafel. I am....truly.

Served with shredded lettuce and we made falafel wraps with the Greek Salad and sauces - so wonderful! Some pickled condiments to go with, too.

Served with your chicken with sumac (Oustanding!!) http://www.grouprecipes.com/42828/chicken-with-sumac.html . A Greek Salad, lots of flatbread...fresh fruit and I made Simsimeyeh (a sesame seed and honey treat) for a dessert. Nice wine. Wow - it all rocked our culinary world. You make me look so good in the kitchen! Thank you...

This is a great recipe. The only thing is I usually always hand mash my chickpeas because it gives a great texture to the patties. You can also put them in the oven, but watch them because they can dry out quickly. I prefer the taste of the fried ones!


Ooh Man are you bringing back memories with this one. Way back (I'm not tellin when) I used to eat these sandwiches from street vendors in San Francisco. Happy Happy Memories.
