You make this the night before you want to eat this wonderful salad. I have been told that you should have this at the start of the New Year to insure a lucky one! :)

Ingredients
- 1 large tomato, seeded & chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 scallions (green onions), sliced
- 6 fresh mushrooms, sliced
- 2 large garlic cloves, minced
- 2 cans (16-oz. cans) black-eyed peas, rinsed & drained
- 1 cup celery, diced
- 1 jar (f oz.) Pimiento, diced and drained
- 1 bottle (8oz.) Italian dressing (don't use the fat-free version)
- **Combine above ingredients, cover and chill overnight, stirring occasionally.**
Directions
- Kale or Radicchio lettuce leaves
- 2 slices bacon, cooked & crumbled
- 1/3 cup scallions (green onions), sliced
- Drain prepared salad and spoon onto kale/lettuce-lined plate.
- Sprinkle with bacon and scallions.
- Serve! Enjoy! :)
