Jetts Inside Out Pineapple Pound Cake

- 1 can (20 ounces) crushed pineapple, undrained, divided shopping list
- 3 sticks butter or margarine(hello, butter!)at room temperature shopping list
- 2 cups granulated white sugar shopping list
- 6 large eggs(room temperature) shopping list
- 3 Cups sifted all-purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1/4 cup milk shopping list
- 1 teaspoon vanilla shopping list
- 1/4 Cup butter shopping list
- 1 1/2 Cups powdered sugar shopping list
How to make it
- Grease and flour large tube pan. Line with wax paper for easy removal of cake. No need to preheat oven!!
- Put 3/4 Cup of undrained pineapple with its juice in small bowl; set aside. Drain remaining pineapple and measure 1 Cup of drained crushed pineapple; set aside.
- Cream butter & sugar until creamy.
- Add eggs, one at a time beating well after each addition.
- Sift flour and baking powder together.
- Add to creamed mixture alternately with milk, ending with flour.
- Add vanilla; stir in 3/4 Cup undrained pineapple with juice and blend well.
- Pour batter into the prepared cake pan.
- Place in COLD oven and bake for 1 hour and 30 minutes.
- Let cake stand and cool for a few minutes before removing from pan.
- Run knife around edges to loosen and remove pineapple pound cake carefully to a rack.
- Have the butter and about 1 cup of the crushed pineapple in a bowl. Add the powdered sugar and mix well.
- Pour pineapple frosting over the warm cake.
- Eat up and enjoy!
