Ingredients

How to make it

  • Grease and flour large tube pan. Line with wax paper for easy removal of cake. No need to preheat oven!!
  • Put 3/4 Cup of undrained pineapple with its juice in small bowl; set aside. Drain remaining pineapple and measure 1 Cup of drained crushed pineapple; set aside.
  • Cream butter & sugar until creamy.
  • Add eggs, one at a time beating well after each addition.
  • Sift flour and baking powder together.
  • Add to creamed mixture alternately with milk, ending with flour.
  • Add vanilla; stir in 3/4 Cup undrained pineapple with juice and blend well.
  • Pour batter into the prepared cake pan.
  • Place in COLD oven and bake for 1 hour and 30 minutes.
  • Let cake stand and cool for a few minutes before removing from pan.
  • Run knife around edges to loosen and remove pineapple pound cake carefully to a rack.
  • Have the butter and about 1 cup of the crushed pineapple in a bowl. Add the powdered sugar and mix well.
  • Pour pineapple frosting over the warm cake.
  • Eat up and enjoy!

    I love love pineapple, am going to make this after i move to my new place can't do it now have only 2 weeks to pack eveything and i only just getting started, so will try for sure this cake.

    this recipe reminds me of a Pound Cake recipe from a favorite southern cakes cookbook that I **USED** to have (silly me, I loaned it to someone & moved without getting it back!) I always baked it around the holidays & add chopped nuts, a dash of coconut extract/flavoring, and a hint (ok, you got me..a generous splash) of rum to the glaze..yum, yum!

    Since canned pineapple is as much a staple for me as bread is for most folks, I do believe I will have to bake this for Sunday dinner!
