Ingredients

3 medium to large bananas

1 egg

2 Tbsp sugar

2 Tbsp rice flour

6 Tbsp dried coconut

50g/2oz butter

1 lime, quartered

Directions

In a mixing bowl beat together egg, sugar and flour

Peel banana, cut in half and slice halves lengthwise

Dip banana slices into egg mixture, then roll in coconut

Melt butter in heavy pan

Cook bananas for 10 minutes, turning when brown

Serve hot with lime quarters

It's really good! Some of my friends like to have them with vanilla ice cream. I like it with pineapple sauce. Gives you a pina colada flavor.
