Jimmys Mexican Lasagna

This a great Mexican dish. A definate favorite in my house.
Ingredients
- 1lb. ground turkey (you can use beef) shopping list
- 1 red onion Chopped shopping list
- 2-3 cloves garlic chopped shopping list
- 1 can Rotel tomatoes shopping list
- 4 oz. Velveeta shopping list
- 1 small can chopped black olives (optional) shopping list
- 2-3 tablespoons cilantro chopped shopping list
- l can Old El Paso refried beans, warmed shopping list
- 1 pkg. Old El Paso Burrito size tortillas shopping list
- 1 Pkg. Shredded cheddar cheese shopping list
How to make it
- Preheat oven to 350 degrees:
- Brown ground Turkey with onion and Garlic; add Rotel tomatoes, Velveeta, black olives and cilantro to ground turkey and stir to let Velveeta melt, remove from heat. Heat refried Beans.
- In a round baking dish, starting with a tortilla; layer tortilla, refried beans, meat mixture and cheese, repeat 4-5 layers ending with meat and cheese.
- Bake in oven for 20 min. or until warmed thru and cheese melts.
- Serve with Old El Paso Thick and Chunky Salsa and chips.
- You can add 1-2 chopped jalapenos for alittle kick.
