Ingredients
  • 4 medium sweet onions
  • 1 stick butter
  • 1 can cream of mushroom soup
  • 1 cup grated cheese
  • 1 cup milk
  • 2 eggs
  • 12-14 saltine crackers, crumbled, divided

Directions
  1. Saute onions with butter.
  2. Butter a 1 1/2 quart casserole and line with half the cracker crumbs.
  3. Pour onions and butter over the crackers.
  4. Spread the soup over the onions.
  5. Beat eggs and combine with milk.
  6. Pour egg/milk mixture over the soup.
  7. Spread rest of cracker crumbs on top.
  8. Sprinkle grated cheese over all.
  9. Bake at 350 about 30 minutes.

Oh this sounds good!
I have a similar recipe, Vidalia Onion Pie, I'll look up and post on my page. It uses crushed cheese crackers for the crust as well as lots of butter and cheddar cheese.
