Asian Sprout Salad

- 100 gm mung bean sprouts - clean, wash and drain shopping list
- 100 gm baby pea sprouts (dow miao) - wash and drain shopping list
- 1 stalk lemongrass - discard tough outer leaves, use bottom half only shopping list
- 1 inch piece fresh turmeric - scrape and julienne shopping list
- 1 fresh red chili - discard seeds and julienne shopping list
- 2 level tbs fresh grated coconut (without skin) shopping list
- 2 tbs crushed roasted peanuts shopping list
- Half tsp red pepper or red chili flakes (optional) shopping list
- ~~~~~~~~ DRESSING INGREDIENTS ~~~~~~~~ shopping list
- 1 tbs fresh squeezed lime juice shopping list
- 2 tsp roasted sesame oil shopping list
- 3 level tsp sugar or to taste shopping list
- 1 level tsp salt or to taste shopping list
How to make it
- Combine the dressing ingredients and stir till sugar and salt are completely dissolved.
- Slice the tender interior part of the lemongrass stalk into very fine juelinne.
- Gently combine mung sprouts, pea sprouts, lemongrass, turmeric, chili and grated coconut in a bowl.
- Pour dressing over salad mix and toss lightly.
- Sprinkle over the peanuts and chili or red pepper flakes. Serve with white rice and grilled or fried chicken or fish.

When I lived in California I had some dear Vietnamese and Korean friends I worked with. They woud always bring more than enough food to share at lunch. It was always so good. This recipe brings back wonderful and delicious memories. Yumm, yumm!
