Green Beans In Garlic Sauce

- 1 1/2 lbs fresh green beans shopping list
- 4 oz fresh shitake mushrooms shopping list
- 1/2 cup grated parmesan cheese (optional) shopping list
- 1/2 cup plain bread crumbs (optional) shopping list
- 2 slices pancetta shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 tbsp butter shopping list
- 1/4 cup fresh Italian parsley, chopped shopping list
- pinch of fresh basil and oregano, minced shopping list
- pinch of red pepper flakes shopping list
- 8 cloves of garlic, peeled shopping list
How to make it
- Bring 5 cups of water and 1 tbsp salt to a boil in a large saucepan.
- Add fresh green beans (tipped and tailed)
- Boil beans for 3-4 minutes, until tender crisp
- Shock beans in a bowl of ice water for 30 seconds to maintain bright green color
- Drain well in colander
- In a large heavy bottomed skillet, brown pancetta ,drain on paper towels and crumble
- Heat olive oil in same skillet with garlic cloves and mushrooms
- Saute until garlic becomes a pale tan color but not brown
- Mash garlic in oil with the tines of a fork
- Add cooled green beans, parsley, butter, crumbled pancetta and remaining ingredients, heat through
- If serving hot , toss with bread crumbs and parmesan and serve when butter has melted
- If serving cold as a salad, omit bread crumbs and parmesan, and dress with either a few drops of fresh squeezed lemon juice or a few drops of balsamic vinegar
