How to make it
- Put Egg Yoke, Lemon juice, Salt, and Garlic in a blender. Puree 30 Seconds
- Turn blender back on again and pour Olive Oil in a thin stream until it is used up. The mixture will form an emulsion
- Gradually add mashed potato and blend until smooth.
- The end result should be like a thick heavy mayo but with more texture.
