Almond Crusted Key Lime Pie

- ****************Crust********************** shopping list
- 1/2 cup margarine or butter shopping list
- 1 cup all purpose flour shopping list
- 1/2 cup chopped blanched almonds shopping list
- 1/4 cup white granulated sugar shopping list
- ********************Filling***************** shopping list
- 3 eggs, separated shopping list
- 1 (14oz)can sweetened condensed milk(not evaporated) shopping list
- 1 teaspoon grated lime peel shopping list
- 1/2 cup lime juice(about 2 limes) shopping list
- whipping cream, whipped and sweetened, if desired shopping list
How to make it
- In large skillet, melt margarine.
- Lightly spoon flour into measuring cup; level off.
- Combine flour and remaining crustingredients in melted margarine.
- Cook over medium-high heat, 3-4 minutes or until mixture is medium golden brown & crumbly, stirring constantly.
- Reserve 1/3 cup crumb mixture for topping.
- Press remaining mixture, using back of fork, firmly into bottom and sides of 9-inch pie pan.
- Cool completely
- In large bowl, beat egg whites until stiff peaks form, set aside.
- In small bowl, beat egg yolks.
- Gradually add condensed milk; mix well.
- Stir in lime peel. Add lime juice a little at a time, stirring after each
- addition .
- Fold mixture into egg whites.
- Pour into crust. Top with reserved crumbs.
- Freeze about 3 hours or until set.
- For longer storage, wrap in foil.
- Allow to soften a few minutes before serving
- Serve with whipped cream, if desired
- 8 servings
