This recipe I got from John Folse which it came from Chef Paul Prudhomme., very good...this recipe was used for Blackened Redfish...but became so famous that redfish was put on the endangered species list. so now chefs and cooks use different fish ..... More

I've made this right out of John Proudhomme's cookbook. It came out absolutely porfect without many modifications whatsoever. That was the first, last and only time that has ever happened. Great post!
