Beef N Blue Stovetop Casserole Recipe

Ingredients

Vegetable oil spray

1.5 lbs lean ground beef

2 T worcestershire sauce

1 T chopped garlic

Seasoned Salt

Garlic Pepper

3 medium onions, chopped

1 1/4 cups red potatoes, diced

8 ounces button mushrooms, sliced

1 c beef broth (or water)

1 teaspoon dried oregano, crumbled

1/2 cup crumbled blue cheese

1/4 to 1/2 cup snipped fresh parsley

Directions

Heat a Dutch oven over medium-high heat.

Remove from the heat and lightly spray with vegetable oil spray (being careful not to spray near a gas flame).

Cook the beef with the onion, garlic, seasoned salt, garlic pepper and worcestershire, until no longer pink in the center, stirring occasionally to turn and break up the beef.

Drain well. Set aside.

Wipe the Dutch oven with a paper towel.

Lightly spray with vegetable oil spray.

Stir in the potatoes, mushrooms, broth, oregano.

Increase the heat to high.

Bring to a boil.

Reduce the heat and simmer, covered, for 10 minutes, or until the potatoes are tender.

Remove from the heat.

Stir in the beef and the remaining ingredients.

Let stand for 2 minutes to absorb flavors.

Unfortunately, I'm the only one in the house who likes blue cheese:( But change it to feta and I think we have a winner! I will definitely be trying this one.
