How to make it

  • Scrub potatoes, prick potatoes and bake in a 400 F oven for 45 to 55 minutes or until tender when gently squeezed
  • In bowl,combine salmon, sour cream, diced cheese, onion, dill, lemon juice and hot pepper sauce.
  • Season to taste with salt, pepper and smoked paprika
  • Cut a 1/2 in thick slice from top of each potato
  • Scoop out pulp, leaving a 1/4 in shell
  • Mash pulp and stir into salmon mixture
  • Spoon into potato shells
  • Top with shredded cheddar
  • Bake at 400F for 15-20 minutes until tops are crisp

    Tried this yesterday ... VERY tasty. I used large baking potatoes and one per person was enough for dinner. I substituted canned tuna for the salmon and a lite Ranch dressing for the sour cream.

    My only complaint was the resulting stuffing was too dry. Next time I'll try adding some soy milk to the final stuffing mix to adjust moisture before putting the mixture back in the potato for the final baking.

    I love the sound of this. Having 3 growing boys and a home to take care of (with hubby out of town most of the year, I am in effect a single parent)I will gratefully take every shortcut available. Which is why I love the way you cook lol You have my gratitude and my 5 ;)

    great idea - i'll use it but change it - i do not like canned salmon. but i love the idea of combining fish with cheddar (LOVE it) and potatoes. shall definitely make it using fresh salmon, steaming it and then procede as you do with your recipe. i'm bookmarking it and shall definitel make is this week-end - got the salmon, the cheddar and the taters :-) thank you for your post!
