Great idea - i'll use it but change it - i do not like canned salmon. but i love the idea of combining fish with cheddar (LOVE it) and potatoes. shall definitely make it using fresh salmon, steaming it and then procede as you do with your recipe. i'm bookmarking it and shall definitel make is this week-end - got the salmon, the cheddar and the taters :-) thank you for your post!

Tried this yesterday ... VERY tasty. I used large baking potatoes and one per person was enough for dinner. I substituted canned tuna for the salmon and a lite Ranch dressing for the sour cream.
My only complaint was the resulting stuffing was too dry. Next time I'll try adding some soy milk to the final stuffing mix to adjust moisture before putting the mixture back in the potato for the final baking.
