Ingredients

1 head of leafy green lettuce, washed, dried, and torn to bite-size pieces.

1/2 red onion, thinly sliced .

1 Granny Smith apple, peeled and thinly sliced .

1/2 cup roasted pecans ( or walnuts)

1/4 cup dried cherries

Raspberry vinaigrette..see below

1/2 cup crumbled gorgonzola cheese ( or Maytag Blue!)

Directions

Toss the lettuce, onion, apple, pecans and cherries in a large salad bowl. Pour on enough dressing to coat and toss the salad. Garnish with gorgonzola cheese before serving.

Rasberry vinagrette:

You may use a bottled all-natural raspberry vinaigrette or make a quick and easy homemade version by whisking together:

1/4 cup extra virgin olive oil

2 to 3 tablespoons raspberry vinegar

1 clove minced garlic

sea salt, to taste

ground pepper, to taste

Oh yeah, I will have to make this. Raspberry vinaigrette is always in my fridge for a good reason -- I love it! I imagine that the addition of apples and blue cheese is out of this world. Thank you for sharing this, Marky!
