Ingredients
- 1 head of leafy green lettuce, washed, dried, and torn to bite-size pieces. shopping list
- 1/2 red onion, thinly sliced . shopping list
- 1 Granny Smith apple, peeled and thinly sliced . shopping list
- 1/2 cup roasted pecans ( or walnuts) shopping list
- 1/4 cup dried cherries shopping list
- Raspberry vinaigrette..see below shopping list
- 1/2 cup crumbled gorgonzola cheese ( or Maytag Blue!) shopping list
How to make it
- Toss the lettuce, onion, apple, pecans and cherries in a large salad bowl. Pour on enough dressing to coat and toss the salad. Garnish with gorgonzola cheese before serving.
- Rasberry vinagrette:
- You may use a bottled all-natural raspberry vinaigrette or make a quick and easy homemade version by whisking together:
- 1/4 cup extra virgin olive oil
- 2 to 3 tablespoons raspberry vinegar
- 1 clove minced garlic
- sea salt, to taste
- ground pepper, to taste
