Crunchy Baked Scallops

- 4 Tablespoons butter, melted shopping list
- 1 1/2 pounds bay scallops, rinsed and drained shopping list
- 1/2 cup crushed pork rinds shopping list
- 1 teaspoon onion powder shopping list
- 1 teaspoon garlic powder shopping list
- 1/2 teaspoon paprika shopping list
- 1/2 teaspoon dried parsley shopping list
- 3 cloves garlic, minced shopping list
- 1/4 cup grated parmesan cheese shopping list
- Wedges of fresh lemon shopping list
How to make it
- Preheat oven to 400°F.
- Pour melted butter into a 2 quart oval casserole dish.
- Distribute butter and scallops evenly inside the dish.
- Combine the pork rinds, onion powder, garlic powder, paprika, parsley, minced garlic and Parmesan cheese.
- Sprinkle this mixture over the scallops.
- Bake in pre-heated oven until scallops are firm, about 16-18 minutes.
- Garnish with lemon wedges. (or spice it up with jalapeno mayonnaise, a kickier version of tartar)
