Ingredients

How to make it

  • Preheat oven to 400°F.
  • Pour melted butter into a 2 quart oval casserole dish.
  • Distribute butter and scallops evenly inside the dish.
  • Combine the pork rinds, onion powder, garlic powder, paprika, parsley, minced garlic and Parmesan cheese.
  • Sprinkle this mixture over the scallops.
  • Bake in pre-heated oven until scallops are firm, about 16-18 minutes.
  • Garnish with lemon wedges. (or spice it up with jalapeno mayonnaise, a kickier version of tartar)

    WOW - what a combination! I've never heard of using pork rinds but it would add a subtle taste as well as crunch. Great post!
