This splendid recipe is for 12 muffins that make for a perfect brunch addition.

Ingredients
  • 1 1/2 cups of self raising flour, sifted
  • 3/4 cup of milk
  • 3/4 cup malt powder
  • 1/2 stick of unsalted butter (must be soft)
  • 1/2 cup light brown sugar
  • additional malt powder for sprinkles
  • 1/2 tspn baking powder

Directions
  1. Preheat to 375F and pop paper lines in your muffin tray.
  2. Soften your butter (but don't melt it) in the microwave.
  3. Mix maltpowder, flour, and sugar well and add butter and rub until you get something consistent with fine bread crumbs. Add milk until you get a nice thick batter.
  4. Fill your tray with each hole only 3/4 of the way full.
  5. Sprinkle some extra malt powder for a little crunch and bake for 20-25 mins.
  6. The muffins fluff up and turn golden when ready. Enjoy!

What kind of Malt Powder do you use? I guess I am unfamiliar with this ingredient.

Where do you find malt powder in the grocery store? I've never heard of it.

I have found malt in health food stores and I think it is stronger than say, Carnation malted milk powder. Sometimes the Carnation is hard to come by but I happened to find a big canister (but not too big) of it at GFS (Gordon Food Service). Most larger grocery stores will carry it and it's usually with the other powdered drink items, like Nestlé Quick, and that kind of stuff.


If you like malt, you'll like these muffins. Malty, without being overly strong. I made the mistake of spooning the malt on top of the muffin instead of sprinkling on with my fingers and I think it was too heavy. It had a strong, chalky taste so next time I will go lighter with that. Otherwise, quite delicious! My dad is malt-aholic and I'm making him a batch later this week.


I love this one, I'm going to make them first chance I get. I'll write again and let you know how we like these. I love the taste of malt!!!

I think there is a mistake in the recipe, baking powder is listed but there is no mention of it in the directions. I'm assuming it should be mixed with the rest of the dry ingredients.
