Chicken Fingers with Chipotle Gravy

- For chicken shopping list
- oil for frying shopping list
- 1 1/2 lb. chicken tenders shopping list
- 1 cup flour shopping list
- salt and pepper shopping list
- 2 tbls. oregano shopping list
- 2 eggs shopping list
- 1 1/2 cups panko bread crumbs shopping list
- For gravy shopping list
- 1 tbls olive oil shopping list
- 1 tbls butter shopping list
- 1 shallot, minced shopping list
- 2 tbls flour shopping list
- 1 cup milk shopping list
- 2/3 cup chicken broth shopping list
- 1 to 2 tablespoon pureed chipotles in adobo shopping list
- 1/2 tbls salt shopping list
- 2 tbls thyme, chopped shopping list
- pepper to taste shopping list
- 1/4 cup crema Mexicana (can substitute creme fraiche but it's not as sweet) shopping list
How to make it
- For chicken
- Preheat oven to 200
- Heat oil to 350 in deep skillet
- Cut chicken into desired size pieces
- Set up dipping station by putting flour into a shallow dish
- Beat eggs in another shallow dish
- Mix bread crumbs, salt and pepper, and oregano into another shallow dish
- Dip chicken in flour, then egg, and lastly breadcrumbs
- Fry in batches until done(about 5 minutes)
- Drain on paper towels
- Place on baking sheet and keep warm in oven
- For gravy
- Heat olive oil and butter in a 2-quart saucepan
- Saute shallot until tender
- Stir in flour and cook over medium-low heat for 2 minutes.
- Whisk in the milk and broth
- Bring to simmer
- Add chipotle, salt, thyme and pepper
- Simmer on low for 10 minutes
- Gravy should coat back of spoon
- Whisk in crema and cook for a minute or 2 longer
- Remove from heat
- *This sauce may be prepared hours in advance and reheated before serving.
