Colombian Cheesy Potatoes

- 2 -1/2 POUNDS OF NEW OR SALAD potatoes shopping list
- 2 TABLESPOON butter shopping list
- 4 spring onions ( scallions ) THINLY SLICED shopping list
- 2 LARGE tomatoes PEELED ,SEEDED AND CHOPPED. shopping list
- 1 CUP OF DOUBLE ( HEAVY) CREAM shopping list
- 1 CUP GRATED MOZZARELLA shopping list
- salt AND pepper TO TASTE shopping list
How to make it
- PLACE POTATOES IN A LARGE PAN OF SALTED COLD WATER., COVER AND BRING TO A BOIL.
- LOWER THE HEAT AND SIMMER FOR 18 TO 20 MINUTES.UNTIL TENDER.
- MEANWHILE, MELT THE BUTTER IN A FRYING PAN OVER LOW HEAT, ADD THE ONIONS, AND COOK GENTLY , STIRRING OCCASIONALLY, FOR 5 MINUTES, UNITL SOFTENED.
- STIR IN THE TOMATOES AND COOK FOR A FURTHER 2 TO 3 MINUTES, STIRRING OCCASIONALLY UNTIL THE TOMATOES BREAK UP.
- DRAIN THE POTATOES AND PUT THEM IN A WARM SERVING BOWL. ADD THE CREAM TO TO ONION AND TOMATO MIXTURE, BRING TO A BOIL, THEN ADD CHEESE, STIRRING UNTIL IT MELTS.
- SEASON WITH SALT AND PEPPER TO TASTE.
- POUR THE HOT CREAM SAUCE OVER THE POTATOES AND SERVE IMMED .........
