Ingredients
  • 1c Ray bread flour
  • 1c Cake flour
  • 1.5c White bread flour
  • 1tsp salt
  • 125g Butter (NO MARGARINE)
  • 1/3c Cumin seeds
  • 200ml Milk (luke warm)
  • Olive oil

Directions
  1. Use 125g real butter and work it into the flour to obtain a texture resembling bread crumbs;
  2. Work a third cup cumin seeds into the crumbs;
  3. Add 200ml luke warm milk;
  4. Work it into the mix until it forms a ball;
  5. Let it rest for 30 minutes;
  6. Roll it out in 30g rounds with an average diameter of 8cm and about 2cm thick;
  7. Heat a pan with olive oil and bake till golden brown.
  8. NOTE:
  9. By rolling it out very thin and then deep frying it, it blows up and forms wonderful snaks. For this I usually cut them into squares of 2cm by 2cm.

Can you cook them over a naked flame rather than fry them ? Sounds interesting .. will have to try them.

CHAPPATIS: Absolutely, you can cook it over a flame - when I said fry I don't mean deep fry - just a drop of oil in the pan, swirl it and fry.


This looks great! I'm not sure where to find ray bread flour. I want to serve this along with my Butter Chicken. I think it would pair wonderfully.
