How to make it

  • Cook bacon until crisp-crumble; put aside
  • Make mashed potatoes in whichever way you make them add the cream and some butter-keep warm
  • Shred the cabbage and saute in the butter until limp. Use as much butter as needed
  • Saute the scallion until tender (save a little for sprinkling on top of finished potatoes
  • When everything is cooked mix all together
  • Put in a casserole dish-make three small wells and place a tsp. of butter in each add the reserved scallion to each well.
  • Keep warm in the oven.
