Potatoes Colcannon Irisher Recipe

Ingredients

3 lbs of potatoes, I use baking because of the low moisture.

1/2 lb of bacon (Please, no low salt or fake bacon-just go for it)

1/2 small head of green cabbage.

2-3 scallion finely chopped

3/4 c. light cream

Salt, pepper

1 stick of butter

Directions

Cook bacon until crisp-crumble; put aside

Make mashed potatoes in whichever way you make them add the cream and some butter-keep warm

Shred the cabbage and saute in the butter until limp. Use as much butter as needed

Saute the scallion until tender (save a little for sprinkling on top of finished potatoes

When everything is cooked mix all together

Put in a casserole dish-make three small wells and place a tsp. of butter in each add the reserved scallion to each well.

Keep warm in the oven.
