Potatoes Colcannon Irisher

- 3 lbs of potatoes, I use baking because of the low moisture. shopping list
- 1/2 lb of bacon (Please, no low salt or fake bacon-just go for it) shopping list
- 1/2 small head of green cabbage. shopping list
- 2-3 scallion finely chopped shopping list
- 3/4 c. light cream shopping list
- salt, pepper shopping list
- 1 stick of butter shopping list
How to make it
- Cook bacon until crisp-crumble; put aside
- Make mashed potatoes in whichever way you make them add the cream and some butter-keep warm
- Shred the cabbage and saute in the butter until limp. Use as much butter as needed
- Saute the scallion until tender (save a little for sprinkling on top of finished potatoes
- When everything is cooked mix all together
- Put in a casserole dish-make three small wells and place a tsp. of butter in each add the reserved scallion to each well.
- Keep warm in the oven.
