Ingredients
  • 2 pounds of lean ground beef
  • 1 cup bread crumbs
  • 1 ( 8 ounce) can of crushed pineapple, drained
  • 1/2 cup bell pepper chopped
  • 1/2 cup onion chopped
  • 1/4 cup celery chopped
  • 2 large eggs, beaten
  • 1/4 cup milk
  • 1/4 cup soy sauce
  • 1-tablespoon finely minced fresh ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • for sauce*********************
  • 1/2 cup orange juice
  • 1/2 cup soy sauce
  • 1/2 cup creamy peanut butter
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon minced garlic

Directions
  1. preheat oven to 350 degrees F.
  2. combine the first 12 ingredients in a large bowl and gently mix until well blended.place in to a loaf pan and bake about 50 minutes or until no longer pink in center .
  3. meanwhile ;combine all other remaining ingredients in a saucepan and bring to a boil, stirring constantly.
  4. lower the heat and continue to cook until thickened into a glaze...
  5. pour about 1/2 cup of the glaze over the top of the meatloaf 5 minutes before the end of the meat loaf time.
  6. serve with remaining warm peanut glaze on the side..................
  7. serves 8.........
