Spicy Chickpea Sauce

- 4 cloves garlic peeled shopping list
- 2 inch piece of fresh gingerroot shopping list
- 1 medium hot fresh red chile or 1 dried Chipotle Chile soaked in hot water until rehydrated. shopping list
- 1 Tsp cumin seeds shopping list
- 1 Tsp garam masala shopping list
- 2 Tbls sunflower oil shopping list
- 1 red onion finely diced shopping list
- 1 16 oz Can chickpeas w/ juice roughly chopped in blender or equivalent amount of dried cooked chickpeas with juice. shopping list
- 1/4 Cup cilantro chopped shopping list
- salt and fresh ground black pepper shopping list
How to make it
- Place garlic, gingerroot, Chile, Cumin Seeds, and Garam Masala in a blender and roughly chop for a few seconds.
- Heat Oil in a heavy skillet over medium heat, stir in chopped spice mixture and gently warm until fragrant. Add the Onion, and cook for 2 minutes.
- Add the chopped Chickpeas w/ their juice and simmer for 10 Minutes. Stir in Cilantro and season with Salt & Pepper to taste.
- If mixture gets too thick, add a little more water.
- Eat in bites with Naan bread, Pita, or Soft Chapattis. Use as a condiment for a Curry dish or with grilled Merguez Sausage (or Grilled fresh Chorizo)
