Blueberry Cream Muffins Recipe

Ingredients
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1/2 tsp vanilla extract
  • 1 cup sour cream
  • 1 cup blueberries, lightly dredged in flour

Directions
  1. Heat oven to 400.
  2. Grease 24 muffin cups or line with paper muffin liners.
  3. Sift together dry ingredients.
  4. Lay out all ingredients close to mixer.
  5. Beat eggs; gradually add sugar while beating.
  6. Continue beating while slowly pouring in oil.
  7. Stir in vanilla.
  8. Mix dry ingredients into wet ingredients, alternating with sour cream.
  9. Gently fold in blueberries.
  10. Scoop batter into prepared muffin cups, filling each about 2/3 full.
  11. Bake for 20 minutes.
  12. Enjoy!

MMMM! I'm into muffins these days and I LOVE blueberry ones. I bet these are especially delicious and moist with the sour cream! Can't wait to try them! Super post.

Absolutely fabulous! I can't wait for blueberry season! There is a place not far away from us to pick our own. I only get scared of the snakes & bugs!! Thanks for sharing.

Ooooh, I just made these and they were really yummy!

I mix 2 tablespoons of flour with 2 tablespoons of sugar and mixed together, gently dust the top of each muffin. It was yummy :)
