Ingredients
  • 2 large whole grain tortillas
  • canned black beans-drained and rinsed
  • sliced jalapeno-jarred kind
  • pepperjack cheese-grated
  • chopped frozen spinach- defrosted and squeezed dry
  • greek yoghurt
  • 1/2 avocado-chopped/mashed
  • chopped tomato
  • 2 scallions-chopped
  • salt

Directions
  1. Place one tortilla on a plate
  2. Spread spinach, cheese, beans and jalapeno slices on tortilla to taste.
  3. **Use as much or as little as you like and substitute anything else here
  4. Top with second tortilla.
  5. Heat in microwave or oven until cheese is melted and quesadilla is warmed through
  6. **While quesadilla is heating up, make 'faux' guacamole**
  7. Mix together avocado, tomato, scallion and salt to taste. (Add a splash of lemon juice or lime juice if you have some on hand)
  8. Slice warmed quesadilla into pie sections like a pizza.
  9. Top with a generous dollop of greek yoghurt (instead of sour cream) and the faux guacamole.
  10. Enjoy!
