I have made this so many times that I have it memorized! It is a really good pepperoni recipe and tastes wonderful! This recipe makes 2 lbs. pepperoni.

Ingredients
  • 2 lbs lean ground beef
  • 2 tsp liquid smoke flavoring
  • 2 tsp ground black pepper
  • 2 tsp mustard seed
  • 1 1/2 or 2 tsp crushed fennel seed (optional)
  • 1 or 2 tsp crushed red pepper (optional)
  • 1/2 tsp garlic powder
  • 1 tsp paprika or cayenne
  • 1/2 tsp sugar
  • 2 heaping tsp Morton's Tender Quick salt

Directions
  1. Mix seasonings and meat horoughly (use your hands).
  2. Cover with foil or clling film and refrigerate for 48-72 hours.
  3. Preheat oven to 200F
  4. Roll meat into two long logs.
  5. Use your broiler pan, or place a rack on a pan that can drain, on a cookie sheet and place the rolls on the rack.
  6. Bake at 200 degrees for 8 hours.
  7. Rotate logs every 2 hours.
  8. Sausages will be pink when finished, and should be fairly dry and firm.
  9. Wipe off excess grease and allow meat to cool.
  10. You can roll the sausages in cracked black pepper, if you like, before cooling.
  11. Wrap and chill.
  12. To serve, slice into thin pieces.
  13. You can refrigerate them for up to 2 weeks or freeze for longer.

This is so cool! I make homemade sausage often but I never even thought about making Pepperoni...my daughter loves the stuff. Soooo way good!
