Mediterranean Medley Salad Recipe

Ingredients

4 cups roughly chopped veggies of your choice (I like tomatoes, red onions, cucumbers, bell peppers)

2 ounces crumbled feta cheese

½ cup pitted and sliced black or Kalamata olives

½ cup torn basil leaves

2 tablespoons extra virgin olive oil

1-tablespoon balsamic vinegar

salt and pepper to taste

Directions

Toss all ingredients together, allow to chill at least 2 hours to let flavors meld.

BTW have you ever heard of Hendrickson's Salad Dressing? It is so wonderful and made with sweet vinegar and olive oil. Makes a salad Grand! And it is fat free, no preservatives and Gluten free.
