I love peaches, so this is first on my grill list again for this season! :)

Ingredients
- # Fresh peaches, 1 per person
- # Butter, 2 tablespoons
- # Brown Sugar, 2 tablespoons
- # Cognac, about 2-3 tablespoons
- # Blue cheese, small sliver, about 2 inches long, ¼ inch cube
- # Warm honey, drizzled
Directions
- First off, stop your complaining about this being an odd combination. Where’s your sense of adventure? :)
- Ok, slice each peach into about 6 pieces and grill about 2 minutes a side.
- In a saucepan or fry pan, melt the butter and sugar, then splash in the cognac. Keep on heat until it’s nice and syrupy.
- Now, put a nice layer or the sauce on a small plate, then place the grilled peach slices on top. Then, put the slice of blue cheese in the center and drizzle the whole darn thing with warm honey. Try it, you’ll like it……Enjoy!

YES - this is going on the grill as soon as I see fresh, ripe peaches around these parts...wonderful combination - I love the "sharpness" of the blue along with the sweetness of the honey and peaches. This is going to be enjoyed - thanks, Noir!
