How to make it

  • Whisk basalmic vinegar and olive oil together in a bowl.
  • add tomatos, onion, garlic, salt, pepper, garlic salt & parsley.
  • set mixture aside to marinate while preparing pasta and chicken.
  • boil pot of water for pasta. once boiling, add pasta and cook til Al Dente.
  • drain and rinse pasta in cold water to stop cooking process and place pasta aside.
  • preheat oven to 350 degrees.
  • wash chicken breast.
  • season chicken breast to taste. I prefer to use lawrys seasoned salt, lawrys garlic salt, pepper and a hint of regular salt.
  • Place chicken skin side up on a baking pan, add a little water to the bottom of pan and place in oven uncovered for 30 mins.
  • about 10 mins before chicken is done, place pasta and tomato mixture into a pan of your liking for stove top cooking and on low heat bring up to a simmer to bring flavors into the pasta. simmer for about 5 to 10 mins.
  • turn off heat.
  • spinkle parmesian cheese over pasta (as much or little that you desire) and stir.
  • when chicken is done, cut on a bias, small strips.
  • add chicken to pasta.
  • lay chicken neatly on top for presentation or mix it in to your liking.
  • If you chose to use flavored basalmic glaze, squeeze zig zag over top of pasta before service.

    Great company fare...some good garlic bread and a salad, and I'm done - love pasta dishes for their simplicity and ease and sheer amounts to feed several people without a ton of work. This sounds excellent...
