Peach Cobbler Casserole

- 6 to 8 ripe peaches shopping list
- 1/2 cup sugar shopping list
- 1/4 cup cornstarch shopping list
- juice from 1 fresh lemon shopping list
- 1/2 tsp cinnamon shopping list
- Topping: shopping list
- 1 1/2 cup flour shopping list
- 1/4 tsp salt shopping list
- 2 tsp baking powder shopping list
- 2 Tbs sugar shopping list
- 1/2 stick butter or margarine shopping list
- 1 egg shopping list
- 6 oz milk or buttermilk shopping list
How to make it
- Unlike cobblers which may be cut into wedges or served on individual shortcakes or biscuits, this is more like a peach casserole with batter topping.
- Wonderful served with ice cream!
- Wash and slice peaches into wedges.
- Place in a large bowl with sugar, cornstarch, lemon juice and cinnamon and mix well to combine.
- Place peach mixture into large casserole dish.
- Make topping.
- Combine flour, salt, sugar and baking powder and blend well.
- Cut in butter or margarine until coarse crumbs.
- Combine fork beaten egg and milk and stir into flour mixture to make a batter.
- Spread batter evenly over peach mixture.
- Bake 425 about 30 minutes or topping is golden.
- Serve warm by spooning topping and peaches into serving dishes.
- Serve with ice cream, or whipped cream if desired.

sounds delicious, I like to add a bit of almond extract flavoring whenever I make desserts with peaches, since the almond flavoring really brings out the peach flavors, as my mom told me, the along nut resembles the peach pit - also true with cherry ...more
