Stuffed Baby Sweet Peppers Recipe
I had some colorful baby sweet peppers that I had gotten at Sam's. I was trying to think of a fun way to serve them and came up with this. Since we love jalapeƱo poppers, this was a take on them that is a bit healthier since they aren't fried.

Ingredients
  • 1 pound sweet baby peppers (I had mixed colors)
  • 2 8 oz packages cream cheese, room temperature
  • 4 oz shredded pepper jack cheese
  • 2-3 garlic cloves, sliced
  • salt and pepper to taste

Directions
  1. Wash, halve and remove stems and cores from peppers, set on a baking sheet.
  2. Combine remaining ingredients in a food processor, mix until well combined.
  3. Place a spoonful of filling in each pepper half.
  4. Bake at 400 for about 10 minutes.
