How to make it

  • Cook potatoes until tender, combine with olives and fetta in a large bowl. Boil garlic for 5 minutes then peel. Puree garlic with oregano, red wine vinegar and olive oil. Toss potatoes with the dressing , parsley and salt and pepper.

    I made this for our picnic today....fabulous! Many years ago we vacationed in Tarpon Springs, FL where we had Greek Salad at a Greek restaurant. There and everywhere else the Greek Salads came with a scoop of Greek potato salad nestled in the bottom - kind of like the prize at the bottom of the Cracker Jack box. I've been looking for a recipe ever since. This was it! Thank you!
