GREEK STYLE POTATO SALAD

You can never have too many potato salad recipes
Ingredients
- 3lbs small red potatoes, halved and sliced crosswise shopping list
- 1/2c kalamata olives, slivered shopping list
- 2 unpeeled garlic cloves shopping list
- 1tsp oregano shopping list
- 2T red wine vinegar shopping list
- 1/2c olive oil shopping list
- 1/2lb crumbled fetta shopping list
- 1/2c chopped parsley shopping list
- salt and pepper to taste shopping list
How to make it
- Cook potatoes until tender, combine with olives and fetta in a large bowl. Boil garlic for 5 minutes then peel. Puree garlic with oregano, red wine vinegar and olive oil. Toss potatoes with the dressing , parsley and salt and pepper.
