Ingredients

How to make it

  • Preheat oven to 350 with rack in center
  • Lightly coate bottom of 9x13 inch pan with all but 1 T pf the oil
  • Slice tomatoes into 1/2 inch thick rounds
  • Arrange slightly overlapping in prepared pan
  • Salt and pepper generously
  • In a small bowl, combine olives, onions, parsley, basil, vinegar, garlic and 1 T oilive oil.
  • Mix well and sprinkle over the tomatoes
  • Top with cheese
  • Bake until tomatoes are hot, about 10 minutes
  • Remove and serve while warm. Do not overcook, or tomatoes will become mushy
