Strawberry Lemonade

- 1 1/2 c sugar shopping list
- 1 c coarsely chopped fresh strawberries shopping list
- 2 c water shopping list
- Zest of 2 lemons, peeled off in strips with vegetable peeler, (avoid the white pith) shopping list
- 2 c fresh squeezed lemon juice shopping list
- 2 1/2 c cold water shopping list
- Fresh lemon slices and strawberries for garnish shopping list
How to make it
- Combine the sugar and strawbberrys with 2 c water in a med saucepan.
- Bring to a boil over medium-high heat, stirring occasionally
- Reduce heat to low and simmer until the berries begin to release their color and soften slightly, about 3 minutes
- Stir in the lemon zest
- Let cool completely
- (the berries will continue to softena nd release their color while the syrup cools)
- Strain the cooled syrup through a fine sieve set over a pitcher or bowl, pressing tightly on the berries to extract most of the syrup
- Discard the solids
- Add the fresh lemon juice and 2 1/2 c cold water to the syrup mixture and stir until well blended
- Garnish with lemon and strawberry slices
- Can be refrigerated up to 2 days.
