Celery Soup With Baby Lima Beans And Caramelized Onions And Leeks

- 4 cups of Organic celery cleaned and chopped shopping list
- 4 large Organic carrots cut into 1 inch rounds shopping list
- 1 Organic russet potato cubed shopping list
- 4 cloves of garlic Crushed skins removed. shopping list
- fresh ground black pepper to taste. shopping list
- 1 Teaspoon hot pepper flakes shopping list
- 4 Tablespoons fresh lemon juice shopping list
- 1 Package of Organic Baby lima beans .75 oz. shopping list
- 6 Quarts of Organic vegetable stock. shopping list
- 3 tablespoons of dried cilantro shopping list
- 2 fresh basil leaves torn into pieces. shopping list
- 1 spring onion chopped fine for garnish shopping list
- 6 Tablespoons of fresh chives shopping list
- 1 tablespoon of olive oil shopping list
- 4 tablespoons of nutritional yeast shopping list
- For the caramelized onions and leeks shopping list
- 1 Organic leek green part only cleaned and sliced thin. shopping list
- 2 large Organic onions pealed and quartered shopping list
- 1 tablespoon of olive oil shopping list
- 3 dashes of tamari soy sauce shopping list
- 3 dashes of vegetarian worcestershire sauce shopping list
- A pinch of sea salt shopping list
- A pinch of Brown Sugar` teaspoon of hot pepper flakes shopping list
How to make it
- Caramelized Onions and Leeks:
- Start the Caramelized Onions and Leeks in a small frying pan with a tablespoon of Olive Oil.
- Add the rest of the ingredients and fry on high for 5 minutes lower the heat and stir.
- Cook on medium heat until nice and brown.
- Set aside.
- Soup:
- In a large Soup Pot, add a tablespoon of olive oil the Carrots, Celery, Potato and garlic.
- Cook on medium for five minutes, Add the Vegetable Stock.
- Bring to a boil for 10 minutes and lower to simmer.
- Add the Baby Lima beans and simmer foe 20 more minutes.
- Add all of the seasoning and the Nutritional Yeast.
- Ladle Soup into a bowl top with Caramelized Onions and Leeks.
- Sprinkle some Spring onions and some fresh chives
- Enjoy
