Celery Soup With Baby Lima Beans And Caramelized Onions And Leeks Recipe

Ingredients
  • 4 cups of Organic celery cleaned and chopped
  • 4 large Organic Carrots cut into 1 inch rounds
  • 1 Organic Russet potato cubed
  • 4 Cloves of Garlic Crushed skins removed.
  • Fresh ground Black Pepper to taste.
  • 1 Teaspoon Hot Pepper flakes
  • 4 Tablespoons fresh Lemon Juice
  • 1 Package of Organic Baby Lima beans .75 oz.
  • 6 Quarts of Organic Vegetable Stock.
  • 3 tablespoons of Dried Cilantro
  • 2 fresh Basil Leaves torn into pieces.
  • 1 Spring Onion chopped fine for garnish
  • 6 Tablespoons of fresh Chives
  • 1 tablespoon of Olive Oil
  • 4 tablespoons of Nutritional Yeast
  • For the Caramelized Onions and Leeks
  • 1 Organic Leek green part only cleaned and sliced thin.
  • 2 large Organic onions pealed and quartered
  • 1 tablespoon of olive oil
  • 3 dashes of Tamari Soy Sauce
  • 3 dashes of Vegetarian Worcestershire Sauce
  • A pinch of Sea Salt
  • A pinch of Brown Sugar` teaspoon of hot pepper flakes

Directions
  1. Caramelized Onions and Leeks:
  2. Start the Caramelized Onions and Leeks in a small frying pan with a tablespoon of Olive Oil.
  3. Add the rest of the ingredients and fry on high for 5 minutes lower the heat and stir.
  4. Cook on medium heat until nice and brown.
  5. Set aside.
  6. Soup:
  7. In a large Soup Pot, add a tablespoon of olive oil the Carrots, Celery, Potato and garlic.
  8. Cook on medium for five minutes, Add the Vegetable Stock.
  9. Bring to a boil for 10 minutes and lower to simmer.
  10. Add the Baby Lima beans and simmer foe 20 more minutes.
  11. Add all of the seasoning and the Nutritional Yeast.
  12. Ladle Soup into a bowl top with Caramelized Onions and Leeks.
  13. Sprinkle some Spring onions and some fresh chives
  14. Enjoy
