Flavorful Fat Free Version:
Instead of regular half-and-half use fat-free or skim milk; you can't tell a difference I swear!
To the bread crumb mixture: Use Italian Seasoned Bread Crumbs. Add a small pinch of Bou Mond Seasoning, enough Paprika to make it reddish in color (since Paprika is more color than anything), and a dash of Cayenne Pepper.
Oil Mixture Coating: Instead of butter, use "I Can't Believe It's Not Butter!" Spray, and instead of oil use Pam Vegetable Oil Spray or the generic equivalent.
Other changes: I also lightly pounded my chicken breasts so that they would cook more evenly.
