  • 5 lb Chicken, roasting
  • 2 Oranges, whole
  • 1 lg Onion, cut in large slices
  • 1/2 c Orange juice, fresh
  • 2 tb Ginger, freshly grated
  • 2 tb Honey
  • 1/2 c Wine

Directions
  1. Rinse and dry chicken.
  2. Sprinkle with salt and pepper.
  3. Insert one clean whole orange in the chicken.
  4. Place in roasting pan, breast side down.
  5. Surround with onion slices.
  6. Mix juice with the ginger, and pour over the chicken.
  7. Roast uncovered at 350 deg F for 1/2 hour.
  8. Remove chicken from the oven, turn over, and smear
  9. with honey.
  10. Suround the chicken with the secon orange,
  11. sliced, and return to the oven.
  12. After five minutes, baste with wine and pan juices.
  13. If browning too quickly, cover with foil.
  14. Baste again, after 1/2 hour. continue cooking until drumsticks are removed easily, about 1 more hour.
  15. Remove the orange from the chicken, and slice chicken
  16. Garnish with herbs, etc

Made this tonight. I was expecting more of an orange burst flavor. What role does the whole orange in the bird cavity play?

Think I would like to enhance the flavor with more spices.

Bird was moist and tender.

Covered with foil for the last hour of bake time. Had to bake an additional 15 minutes before the breast plug thermometer popped up.


I just asked my BF whose from Israel originally - he loves this dish - and here I was thinking - oh yeah, I make this all the time, not knowing this is popular over there.... I have been making orange roasted chicken for years - quite nice - I like the added touch of the ginger and honey.... I just might make your dish tonight...

Israel is known for their orange and citrus crops and their use in cooking.In the cavity, The acid in the oranges also helps tenderizes the meat as well as giving some flavor. One might want to use grated orange rind also.

Anyone who really wants an orange burst should brush their chicken during roasting perhaps with some orange marmalde or preserves the last 20 minutes or 30 minutes. Israeli exports a great Haifa orange preserve product.

Ok but when and where does the fresh ginger go - did I miss something in the recipe? lol.... starting to rinse chicken now...I usually cut up the chicken before putting it inside the bird - I also remove the rind to avoid any bitterness....


In the recipe the ginger is mixed with the orange juice as instucted. A bit of orange rind won't make it bitter either


Brushing with orange marmalade sounds like a wonderful idea.

This recipe is fantastic. I made this last night for my boyfriend, he absolutely loved it and so did I. I brushed on a little orange marmalade about a 1/2 hour before the chicken was done for a little extra flavor. :)


I am going to make this tonight after reading the great comments. It looks like a high five recipe to me
