Ingredients

How to make it

  • Place 2-inches of water in a small saucepan; add carrots.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 30 minutes, or until tender
  • Drain.
  • Place carrots in blender or food processor
  • Add salt, butter brown sugar an ginger and salt
  • Cover and process until smooth
  • Transfer to a serving bowl and stir in the cranberries
  • 6 servings

    Nov 26/15 What a great recipe. The only tweak I did was using my potato masher mashed the carrots with butter etc instead of using my blender. Loved the flavour combination. Will be making again.
