How to make it

  • Preheat oven to 400. In a medium bowl,toss potatoes with olive oil. Place cut side down on baking sheet and bake till skins are crisp.
  • 20-25mins;let cool
  • Scoop out the center of each potato half and place in a medium bowl. Stir in sour cream,blue cheese,bacon,parsley and onion. Fill each potato skin with the sour cream mixture and top with more bacon and parsley.

    I love blue cheese in anything I can think of, and these potatoes sound like a perfect match for it...will have to try this one soon. Thanks!
