I just made this cake again and I noticed that my bag of frozen cherries contained 4 cups so I edited the recipe. I buy cherries when the grocery store gets them in stock in July. They come in large white buckets with or without sugar and they are already pitted. Mine are unsweetened and I divide the bucket evenly and freeze the cherries in zip lock bags in 4 cup portions.

This sounds good from the ground up. I bet you can get away with ricotta cheese, processed smooth, for the cheese layer. Niiice crust recipe, btw--and I see that you get the packets of vanilla sugar! I haven't seen those since I was an exchange student in Munich! No, seriously, you might want to send the crust recipe to some groups, like Pate Brisee Sucre.
And, thank you so much for the rating on my salad dressing. I'm glad you enjoyed it.
