Another recipe from local restaurant The Tomato Head. Easy meal that tastes fabulous! Salad and crusty bread are all you need to add.

Ingredients
  • ½ cup oil
  • ½ cup onion, chopped
  • 5 cloves garlic, chopped
  • 1 cup mushrooms, sliced
  • 1 cup andouille sausage, sliced
  • 1- 28 oz. can crushed tomatoes
  • 2 cups water
  • 1 ½ tsp salt
  • ½ lb. Spaghetti noodles, broken into pieces
  • ½ cup heavy cream
  • ½ cup fresh basil, chopped
  • 1 ½ - 2 cups shredded cheese

Directions
  1. Heat oven to 350 degrees.
  2. Heat oil in a large skillet over medium heat.
  3. Add onions and sauté until translucent.
  4. Add garlic, sauté one minute longer.
  5. Add mushrooms and sausage and sauté 2 - 3 minutes.
  6. Add tomatoes water salt and sugar.
  7. Stir.
  8. Add noodles, stir and bring mixture to boil.
  9. Reduce heat and simmer mixture for 7 - 8 minutes.
  10. Stir in cream, and basil and cook until most of the liquid is absorbed, about 7-8 more minutes.
  11. Sprinkle with shredded cheese
  12. Place in oven just until cheese melts.
  13. Serve immediately.

Do you mind, for my family's special tastes, if I change the 1/2-cup heavy cream in your wonderful Skillet Spaghetti with Adouille Sausage and Mushrooms Recipe to 3/4-cup jarred pasta sauce. I think I'm going to make this tonight - just what I was searching for - something to do with my andouille, and I found it!! I also have onions up the wazoo to use up. (Damn Costco - whole bag of Vidalia sweets for only 5.99) My eyes are still burning from chopping and freezing them. So I might be using more than a 1/2 cup LOL
