Ingredients
  • 1 beef top loin steak, 2 inches thick (about a full lb.)
  • 1/3 cup of chopped red onion
  • 1/3 cup of sliced mushrooms (use the remaining mushrooms on a skewer)
  • 2 teaspoons of unsalted butter
  • 1 tbsp of dry bread crumbs (seasoned is best)
  • 2 teaspoons of minced parsley
  • 2 tsp of cooking oil
  • 1/2 to 3/4 ounce of blue cheese crumbles

Directions
  1. Cut a deep slit horizontally in the steak to form a poket.
  2. Cook the onion and mushrooms in butter until tender.
  3. Cool/stir in bread crumbs, oil, dash of pepper and parsley.
  4. Add blue cheese.
  5. Stuff into pocket in meat.
  6. Secure with skewers along the edge to close.
  7. Grill over medium high heat about 6 minutes per side for medium rare.
  8. Let it rest for 10.
  9. Slice crosswise and serve.
  10. I like to skewer my extra mushrooms on water soaked bamboo skewers and brush them with a vinaigrette and grill them alongside the steak as an extra side dish.
  11. Tomatoes with garlic dressing are delicious with this dinner. As well as simple steamed broccoli.
