How to make it

  • Cut a deep slit horizontally in the steak to form a poket.
  • Cook the onion and mushrooms in butter until tender.
  • Cool/stir in bread crumbs, oil, dash of pepper and parsley.
  • Add blue cheese.
  • Stuff into pocket in meat.
  • Secure with skewers along the edge to close.
  • Grill over medium high heat about 6 minutes per side for medium rare.
  • Let it rest for 10.
  • Slice crosswise and serve.
  • I like to skewer my extra mushrooms on water soaked bamboo skewers and brush them with a vinaigrette and grill them alongside the steak as an extra side dish.
  • Tomatoes with garlic dressing are delicious with this dinner. As well as simple steamed broccoli.

    It sounds unholy to cut a steak for the pocket...Does it still keep most of it's juices with the skewers though?
