Stuffed Steak

- 1 beef top loin steak, 2 inches thick (about a full lb.) shopping list
- 1/3 cup of chopped red onion shopping list
- 1/3 cup of sliced mushrooms (use the remaining mushrooms on a skewer) shopping list
- 2 teaspoons of unsalted butter shopping list
- 1 tbsp of dry bread crumbs (seasoned is best) shopping list
- 2 teaspoons of minced parsley shopping list
- 2 tsp of cooking oil shopping list
- 1/2 to 3/4 ounce of blue cheese crumbles shopping list
How to make it
- Cut a deep slit horizontally in the steak to form a poket.
- Cook the onion and mushrooms in butter until tender.
- Cool/stir in bread crumbs, oil, dash of pepper and parsley.
- Add blue cheese.
- Stuff into pocket in meat.
- Secure with skewers along the edge to close.
- Grill over medium high heat about 6 minutes per side for medium rare.
- Let it rest for 10.
- Slice crosswise and serve.
- I like to skewer my extra mushrooms on water soaked bamboo skewers and brush them with a vinaigrette and grill them alongside the steak as an extra side dish.
- Tomatoes with garlic dressing are delicious with this dinner. As well as simple steamed broccoli.
