Fettucine With Mushrooms And Roasted Red Peppers

- 8 ounces uncooked fettuccine or spinach fettuccine shopping list
- 2 Tbl butter shopping list
- 1/3 C thinly sliced shallots shopping list
- 8 ounces fresh mushrooms, coarsely chopped shopping list
- 1/4 C chopped roasted red peppers shopping list
- 1/4 C white wine or chicken broth shopping list
- 3/4 C milk shopping list
- 1 Tbl cornstarch shopping list
- 1 C fresh baby spinach leaves shopping list
How to make it
- Cook pasta according to package directions, rinse with hot water; drain Keep warm
- Meanwhile, in a 12 inch skillet melt butter; add shallots
- Cook over medium heat until shallots are softened, about 1 minute
- Add mushrooms; continue cooking, stirring ocassionally, until mushrooms are softened(4 to 5 minutes)
- Stir in red peppers and wine
- In a small bowl stir together milk and cornstarch; stir into mushroom mixture
- continue cooking, stirring constantly, until mixture boils and thickens(2 to 3 minutes)
- In a large pasta or serving bowl toss together hot pasta, mushroom sauce and spinach leaves
- Season with salt and pepper
