How to make it

  • Cook pasta according to package directions, rinse with hot water; drain Keep warm
  • Meanwhile, in a 12 inch skillet melt butter; add shallots
  • Cook over medium heat until shallots are softened, about 1 minute
  • Add mushrooms; continue cooking, stirring ocassionally, until mushrooms are softened(4 to 5 minutes)
  • Stir in red peppers and wine
  • In a small bowl stir together milk and cornstarch; stir into mushroom mixture
  • continue cooking, stirring constantly, until mixture boils and thickens(2 to 3 minutes)
  • In a large pasta or serving bowl toss together hot pasta, mushroom sauce and spinach leaves
  • Season with salt and pepper
