Tequila Lime Chicken Fajitas

- 4 chicken breasts (boneless, skinless) shopping list
- 1/2 cup tequila (any brand, not that important, you're not drinking it - haha) shopping list
- 1/4 cup fresh lime juice shopping list
- 1 tbls minced garlic shopping list
- 1/2 tsp cumin shopping list
- pepper flakes to taste shopping list
- 1 Tbls olive oil shopping list
- 1/2 tsp salt shopping list
- Sliced red bell pepper (I used one half -saved rest- depends on how much you want) shopping list
- pico de gallo shopping list
- 1/2 cup chopped onion shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 3 roma tomatoes, chopped shopping list
- 1 - 2 Tbls chopped jalapenos shopping list
How to make it
- In shallow dish, add all ingredients except chicken, stir to combine
- add chicken
- marinate for 1 to 2 hours (or more if desired, but not necessary)
- Grill chicken breasts in grill pan on stove over med heat or on gas grill over med low flame till done. About 10 - 15 min. max. Do not over cook. Let rest for a couple minutes. Meanwhile, put red bell pepper in pan with some of the marinade from the chicken (be sure and boil first) and saute on medium till done al dente. Slice chicken on diagonal and serve on flour tortillas with sour cream, red bell peppers, and pico di gallo (and guacamole, if desired).
