Ingredients
  • 1 lemon, zest removed and minced
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1 clove garlic, minced
  • Coarse salt and freshly ground pepper
  • 2 tablespoons olive oil
  • 4 bone-in loin pork chops (8 ounces each)

Directions
  1. Combine minced lemon in a small bowl with parsley, garlic, 1/2 teaspoon coarse salt, and 1/4 teaspoon ground pepper.
  2. Set aside.
  3. Heat olive oil in a large skillet over high heat.
  4. Season pork chops on both sides with salt and pepper.
  5. Cook in skillet until browned, 2 to 3 minutes per side.
  6. Add 1/2 cup water to skillet; bring to a boil.
  7. Reduce heat to medium-low; cover, and simmer gently until pork is cooked through, 8 to 10 minutes.
  8. Transfer pork chops to a platter or serving plates; drizzle with pan juices as desired, and sprinkle with lemon-parsley mixture

Sounds simple and good. I haven't had a lot of success with pork chops lately. They seem to have no flavor anymore. I might try this.

I just might change my mind about cooking porkchops my "usual" way - in a gravy made from combining cream of mushroom and cream of celery soup. Season and saute chops, layer with onions, pour on soups and bake till very tender. That's good too...but this is different.


Oooooooo...YUMMY. I just bought some pork chops (just the rib, not with loin) today to grill tomorrow. I am going to do this recipe instead, I know it's going to be a winner.
