Ingredients
  • 5 ounces fresh red thai chiles, seeded
  • 1 medium shallot, peeled
  • 5 cloves garlic,
  • 1/2" piece of ginger, peeled
  • 1/4 -- 1/2 cup boiling water
  • 1 teaspoon rice vinegar
  • 1 teaspoon fish sauce
  • 2 teaspoons palm sugar
  • 1/2 teaspoon salt

Directions
  1. Combine chiles, shallots, garlic, and ginger in a food processor or blender and process to a paste. Add boiling water, and process until well mixed, then add remaining ingredients.
  2. Let stand at least 1 hour before serving... overnight is better. This should last about two weeks in the fridge (if not gobbled up before then ;-) )

Great sauce. I left out the shallots and fish sauce, and used white wine vinegar instead. Very hot, so use with caution! Great with chicken and rice.


Sometimes,if I dont hve fresh chili peppers I use dried red chili flakes.It come out very well.Great recipe here !
