Thai Sweet Chili Sauce

- 5 ounces fresh red Thai chiles, seeded shopping list
- 1 medium shallot, peeled shopping list
- 5 cloves garlic, shopping list
- 1/2" piece of ginger, peeled shopping list
- 1/4 -- 1/2 cup boiling water shopping list
- 1 teaspoon rice vinegar shopping list
- 1 teaspoon fish sauce shopping list
- 2 teaspoons palm sugar shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Combine chiles, shallots, garlic, and ginger in a food processor or blender and process to a paste. Add boiling water, and process until well mixed, then add remaining ingredients.
- Let stand at least 1 hour before serving... overnight is better. This should last about two weeks in the fridge (if not gobbled up before then ;-) )
