Got this off the net years ago from Schnepf Farm in Arizona....

Ingredients
  • 3 cups sugar
  • 1 cup milk
  • 3 tbls light corn syrup
  • 1/2 cup pumpkin puree
  • 1/4 tsp salt
  • 1 1/2 tsp vanilla
  • 1 stick butter
  • 1/2 cup walnuts, chopped (optional)

Directions
  1. Butter 8 in. square pan.
  2. In large saucepan, mix sugar, milk, corn syrup, pumpkin and salt Bring to a boil over high heat, stirring constantly
  3. Reduce heat to medium, add vanilla and butter, and continue boiling for 7 minutes
  4. DO NOT STIR
  5. Pour into pan
  6. Push the nuts down into the top of the fudge with a spoon
  7. Cool

Sounds wonderful! I might add some cinnamon, nutmeg and cloves to make it more pumpkin pie-ish. May I? LOL

Oh, and BTW -- the number of calories should always be in direct relationship with the amount of time that it takes to make / prep / cook the recipe.
